With having spent most of his life butchering wild game, it's know wonder the U.S. Army Special Forces sought him out to develop and design programs specifically tailored for the needs of soldiers while deployed around the world. Jason brings his passion to the world of butchering through education and changing the way we look at butchery. Jason travels around the country advocating whole animal butchery and the importance of knowing where the meats you consume come from. The Rocky Mountain Institute of Meat to teach a Certificate program in whole animal butchering giving American Culinary Federation members 40 Continuing Education Hours towards culinary education. Jason has a long history of butchering everything his family harvested while growing up in Woodland Park Colorado. After a couple career changes from construction, horticulture and law enforcement he jumped into professional butchery in 2012. Rocketing him self into the butcher and culinary worlds, Jason made his mark by changing the way Chefs and butchers think about butchery by showing new and innovative ways to butcher meats by combining his wild game butchering and professional butchering skills!
